I am thinking about the design of an undergrad course in Natural Language Processing.

Three textbooks or reference books:
  • Survey of Human Language Technology
  • NLTK book
  • Kroeger's Analysis of Grammar
Some exercises:

Inferring genealogical trees from Ruhlen
  1. use Austronesian Basic Vocabulary Database for data
  2. refer to Ethnologue to compare resulting trees
